Grikios Halloumi is an original semi-hard cheese produced according to a traditional Cypriot recipe. It has a simple composition that is based on cow's, sheep's and goat's milk.
Despite some similarity to feta or mozzarella, it is difficult to find a substitute for it – especially when grilled. When exposed to high heat, it reaches its full flavour and unique texture. Its surface is lightly browned and toasted, allowing the delicate interior to become springy. It can also be served cold.
