Morbier AOP Cheese
This is a very interesting French cheese. Morbier consists of two layers separated in the middle by a layer of neutral vegetal ash. In the past it served increasing the shelf life of the product, but now it is added mainly to preserve tradition. In addition it has a Protected Designation of Origin certificate, which means that it can only be produced in the Franche-Comté region.
It is made from raw cow’s milk. It matures for at least 45 days. During this time, the rind takes on a light grey to orange-beige colour. It has a springy, creamy texture and a creamy taste and aroma. The latter brings to mind the scent of fresh hay.
