Gorgonzola DOP Cheese
Gorgonzola cheese, with a certificate of Protected Designation and Origin, is produced in the northern parts of Italy. The environs of Bergamo, Cuneo, Lecco, Como and 12 more towns and villages are production reserves of sorts that rigorously maintain environmental conditions to produce a cheese of the highest quality and with a familiar, repeatable and much-loved flavor.
Gorgonzola takes on a soft and creamy texture during the production process. It is usually white in color with greenish-blue mold veins. Over time, the white may take on a straw color. Its taste is sweet, but tangy notes are noticeable. It also has a characteristic, somewhat intense aroma, typical of blue mold cheeses.
